The best part of late summer is fresh corn on the cob. A local farmer grows outstanding sweet corn that we load up on and freeze for use during the shivers of winter. One of our family favorites is corn chowder, especially on a cold, snowy day...bringing back the taste of August's best in the middle of January.
Making the chowder in the morning and letting it cook in the crock pot all day on a low setting makes dinner time less stressful!

Corn Chowder
1 package fresh bacon
1 stick butter
1 chopped onion
1 cup chopped celery
2 tablespoons flour
2 cups milk
4 cups chicken broth
2 cups half and half
2 -3 cups corn kernels
4 cups cubed potatoes
1 tablespoon sea salt
1 teaspoon garlic pepper
-In heavy skillet, melt butter, add onion and celery and saute'.
-Remove from heat and blend in flour. Add milk and stir until smooth.
-In crock pot, pour chicken broth and half and half. Then add milk mixture with onions and celery from skillet.
-Add corn and cubed potatoes.
-Season with salt and garlic pepper.
-Cook on low until potatoes are tender.
-Cook bacon until crisp and sprinkle atop each bowl of chowder when ready to serve.
